Hearty chicken and vegetable soup

Serves 2

Ingredients

  • 1 tbs olive oil 

  • 1 onion, diced 

  • 2 cloves garlic, minced 

  • 2 carrots, diced 

  • 2 celery stalks, diced 

  • 2 cups diced cooked chicken breast 

  • 4 cups low-sodium chicken broth 

  • 1 cup cooked quinoa 

  • Salt and pepper to taste

Method

1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until fragrant. 
2.
Add carrots and celery, cook until slightly softened. 
3.
Stir in diced chicken, broth, and cooked quinoa. Bring to a simmer. 
4.
Season with salt and pepper to taste. Simmer for 15-20 minutes. 
5. Serve hot and enjoy a protein-packed meal.
